HOW TO COOK FOXTAIL MILLET?

FOXTAIL MILLET RECIPE

  1. Foxtail Millet Upma

 

INGREDIENTS

 

·      1 cup of Organic foxtail millet

·      2 cups of water

·      1 onion, chopped

·      1 tomato, chopped

·      1 green chili, chopped

·      1/2 inch ginger, grated

·      1/2 tsp mustard seeds

·      1/2 tsp cumin seeds

·      1/4 tsp turmeric powder

·      Salt to taste

·      2 tbsp of oil

·      2 tbsp of chopped coriander leaves

 

INSTRUCTIONS

 1.    Rinse the foxtail millet well and soak it in water for 20-30 minutes.

2.    Drain the water and keep the soaked millet aside.

3. Heat oil in a pan and add mustard seeds and cumin seeds until splutter.

4.    Add chopped onion, green chili, and grated ginger. Sauté until the onions become translucent.

5.    Add chopped tomatoes and cook until they become soft.

6.    Add turmeric powder and salt, and mix well.

7.    Add the soaked foxtail millet and saute it for 2-3 minutes.

8.    Add 2 cups of water and mix well.

9.    Cover the pan and cook on low flame for 15-20 minutes or until the water is absorbed and the millet is cooked.

10. Once cooked, turn off the heat and let the upma sit for 5-10 minutes.

11. Garnish the upma with chopped coriander leaves and serve hot.

 

Foxtail Millet Roti

Ingredients:

  • 1 cup foxtail millet flour
  • 1/4 cup wheat flour
  • Salt to taste
  • Water as needed
  • Oil for cooking

 

Instructions:

  1. In a mixing bowl, combine the foxtail millet flour, wheat flour, and salt.
  2. Slowly add water, a little at a time, and knead the dough until it is smooth and pliable.
  3. Divide the dough into small balls and flatten them into discs.
  4. Roll out the discs into thin roti, dusting them with some flour to prevent sticking.
  5. Heat a griddle or a non-stick pan over medium heat.
  6. Place a roti on the griddle and cook it for about 1 minute or until bubbles start to appear on the surface.

Ingredients:

  • 1 cup foxtail millet flour
  • 1/2 cup jaggery powder
  • 1/4 cup ghee
  • 1/4 cup chopped nuts (almonds, cashews, etc.)
  • 1/2 teaspoon cardamom powder

 

Instructions:

  1. Heat a pan over medium heat and dry roast the foxtail millet flour for 3-4 minutes, stirring constantly, until it turns golden brown and fragrant. Remove from heat and let it cool down.
  2. In a separate pan, heat the ghee over medium heat.
  3. Add the chopped nuts and roast until they turn golden brown.
  4. Add the jaggery powder to the pan and mix well until it melts and forms a syrupy mixture.
  5. Add the cardamom powder and mix well.
  6. Turn off the heat and add the roasted foxtail millet flour to the pan.
  7. Mix well until all the ingredients are combined and the mixture comes together.
  8. Allow the mixture to cool down slightly until it can be handled comfortably.
  9. Take a small portion of the mixture and roll it into a ball, pressing firmly to form a ladoo.
